The Role

The Garde Manger is responsible for food preparation, serving, and quality control of cold food items.

Responsibilities

The Garde Manger monitors food production and quality control of various foods in the cold kitchen, including meat, fowl, and fish.  Additionally, in charge of all physical cold kitchen aspects, monitoring, preparing, and serving to effectively support culinary operations.


• Collaborating with the Executive Chef for menu development implementation.
• Developing and implementing menus.
• Assisting in ordering food supplies and handling weekly/monthly inventories.
• Maintaining and abiding by health and sanitation laws and standards.
• Inspecting and selecting only high-quality items for preparation.
• Tracking and monitoring proper product storage, ensuring adequate portion control of meat to maintain product quality.
• Preparing supply requisitions and cold food items for delivery.
• Ensuring assigned areas have adequate supplies as per the day's production sheet, daily menus, and special function requests.
• Ensuring that all equipment is in proper operational condition and cleaned on a daily basis.
• Correctly dating and labeling all products for sanitation and safekeeping.
• Prepare and accurately present cold foods ranging from salad to cold desserts and meats.

Qualifications

• Culinary certification and/or two years' experience in a restaurant.
• Must have excellent written and verbal communication skills and the ability to multitask and prioritize in a detail-oriented environment.
• Knowlege in inventory planning and review.
• Mechanical knowledge in using slicing machine, cryovac equipment, juicer, and other small wares.
• Must be flexible to work extended hours due to business requirements including late nights, weekends and holidays.
• High level of attention to detail and organization.
