Summary:
Bakery 55 is located at the John Labatt House in the historic Cobblestone District of Buffalo. The Executive Bakery Manager will oversee the bakery operation including staff management, inventory, ordering, labor costs, food costs, and other projects as directed by the VP of Hospitality. In addition, the position is responsible for directing, planning, and overseeing preparation of all baked goods and pastries for the restaurant and other hospitality entities. You and your team will work to ensure the freshest bakery items are available for our customers.
 
 Core Responsibilities:
  •  Utilize production guidelines to produce baked goods to recipe/spec
  •  Prioritize tasks, rotate, pull and record shrink where applicable
  •  Seek continuous improvement opportunities for production efficiency
  •  Assist in the receiving and ordering of all product
  •  Properly labeling, dating, covering and refrigerating bakery items
  •  Control food cost and usage by following proper requisition of products from storage areas, product storage procedures and, standard recipes and waste control procedures including checking and maintaining proper food holding and refrigeration temperate control points
  •  Keep accurate log records
  •  Ensure equipment is kept clean and in excellent working condition through personal inspection and by following the restaurants preventative maintenance programs
  •  Perform opening, closing and side duties including, set up and, stocking and breaking down all kitchen equipment. 
  •  Maintain an organized and sanitary kitchen environment
  •  Demonstrate impeccable product knowledge
  •  Manage staff to include hiring and performance management

 Minimum Qualifications for the Position:
  •  2 years baking and pastry experience in a high-volume production environment 
  •  2 years management experience
  •  Bench experience with shaping and folding bread, croissants, danish and other baked goods
  •  Available for flexible scheduling to include early mornings, evenings, weekends, and holidays. 
  •  Must be able to lift up to 50lbs.
