JOB SUMMARY:

The Performance Sous Chef is a vital member of the Utah Mammoth Culinary Team and operates under the leadership of the Executive Performance Chef and in close collaboration with the High Performance Team. This role is responsible for the seamless execution of all aspects of daily food preparation, including culinary production, procurement, inventory management, and upholding the highest standards of nutrition, safety, and service excellence.

The Performance Sous Chef thrives in a dynamic, high-performance, fast-paced environment, and is driven by a commitment to precision, consistency, and continuous improvement. This is a year-round role and will work according to team and player needs.


DUTIES & RESPONSIBILITIES:


Culinary Execution & Meal Service

  • Lead the preparation and execution of daily meals across all service periods, ensuring strict adherence to performance nutrition standards, portion control, allergen protocols, and individualized player needs.
  • Support the creation and implementation of elite, performance-driven menus in alignment with training, travel, and competition schedules.

Team Leadership & Development

  • Mentor and train culinary staff to uphold departmental standards of excellence, precision, and professionalism.
  • Foster a collaborative, growth-minded kitchen culture that reflects the values of high-performance sport.

Food Safety, Sanitation, & Standards

  • Ensure all food safety protocols, health codes, and cleanliness standards are consistently met or exceeded.
  • Maintain a “TV Ready” kitchen environment at all times — organized, clean, and inspection-ready.

Procurement, Inventory, & Vendor Relations

  • Manage ordering, receiving, and inventory of food and supplies in alignment with weekly menu plans and operational needs.
  • Maintain strong, professional relationships with vendors and purveyors, ensuring the highest quality products and reliable service.

Operational Oversight

  • Supervise daily operations at assigned facilities (e.g., Sandy/Delta), including kitchen organization, staff coordination, and production timelines.
  • Monitor and confirm timely delivery, storage, and rotation of all food and supply items.

Communication & Confidentiality

  • Ensure effective internal communication via digital platforms (email, Slack, Google Calendar, etc.) and in-person coordination.
  • Uphold complete discretion and confidentiality concerning athlete, coaching staff, and organizational information — in alignment with HIPAA and internal privacy protocols.

Other Responsibilities

  • Execute additional tasks and responsibilities as directed by the Executive Performance Chef.

REQUIREMENTS:

  • 5+ years of experience in kitchen/hospitality.
  • 3+ years management experience.
  • In-depth knowledge of food principles and best practices.
  • Passion for creating experiences that positively impact guests.
  • Exceptional standards for cleanliness, health, and safety.
  • Servsafe certified.
  • Must possess a valid Utah driver's license. 
  • Must be able to pass a Motor Vehicle Report (MVR) screening in accordance with company policy and insurance requirements.
