Summary:

As a member of the Arizona Cardinals Nutrition Services Department, the Cook II is responsible to assist the Cook III and Executive Chef with the preparation of team and corporate meals during all phases of the year, as well as provide assistance, guidance, and instruction to Cook I.

 

Primary Job Duties:

The Cook II, Football Operations, will have the daily responsibilities, without limitation, to include the following:

  • Works cooperatively to execute the high standards of Arizona Cardinals meal services
  • Prepares ingredients for recipes, and follow recipes accurately and independently demonstrating proper techniques throughout 
  • Proficient in the use of ovens, stoves, grills, kettles, microwaves, and fryers, as well as necessary prep tools (blender, food processor, mandolin, mixer, etc.)
  • Provides line support during service, successfully communicating with FOH staff to ensure product is constantly available during meals
  • Ability to perform line duties for any meal service
  • Able to develop and produce daily specialty items
  • Efficiently operates and maintains clean and orderly prep/cook station
  • Follow procedures for serving food, as well as rotating and storing food within coolers, freezers, dry storage, etc. utilizing a FIFO-approach (including labeling, dating, rotating, and screening products to meet food safety and organizational standards.)
  • Adhere to guidelines for discarding or returning products that do not meet organizational standards
  • Assist all chefs in presenting and executing new recipes following food trends that adhere to dietary and nutrition needs of the team
  • Report low stock items to Culinary Operations Manager
  • Participate with the executing training camp meal operations at off-site locations
  • Other duties as assigned

 

Qualifications/Requirements:

  • Education: High school diploma or GED Culinary background required, including formal culinary training; equivalent work experience may be substituted as appropriate
  • Experience: Experienced in all areas of meal preparation, including from scratch cooking; previous restaurant experience and food service operations knowledge
  • Knowledgeable in functionality of UKG
  • Maintains work uniform and personal hygiene to department standards
  • Vast understanding of flavor profiles and seasoning with the ability to read and execute recipes independently
  • Knowledge of weights, measurements, volume and cooking procedures
  • Familiar with proper use of commercial kitchen equipment
  • Required to work team events on weekends, off-site and out of state when necessary
  • Understands the importance of teamwork and adherence to department guidelines
  • Ability to respectfully communicate questions, suggestions or ideas to the chefs
  • Outgoing, goal oriented and high energy; demonstrate a growth mindset and learning attitude
  • Ability to work positively in a fast-paced environment and to prioritize multiple tasks in a deadline driven environment
  • Must be current with all required certifications including a food handlers card
  • Respectfully handles confidential information and maintains a professional attitude around professional athletes in their work environment.
  • Must be able to walk and/or stand for long periods, lift food deliveries and equipment up to 50 lbs., work with knives, and assist in setting up the training camp kitchen
  • Flexibility to work evenings, weekends, and holidays; hours may vary depending on business needs
  • Must complete all pre-employment forms and successfully pass a background check.
