Summary  
The Team Chef - Home Clubhouse will have a passion for cooking, food composition and nutrition. Responsibilities include developing appetizing nutritionally focused menus, promoting diverse local and regional food choices, and provide a system through which our athletes are optimally fueled.  Displaying a strong enthusiasm for great food, this position designs balanced menus, coordinates with local caterers, and executes multiple meals per day.  Must be cognizant of managing and overseeing food costs within designated seasonal budgets. Performs in accordance with restaurant standards and policies.  This position is based in Milwaukee, WI with some travel to Phoenix, AZ.

Responsibilities
Essential Duties and Responsibilities

  • Assist in the planning of team meals and ensure implementation within the Brewers Nutrition Program
  • Prepare nutritionally rich snack items for pregame to include an assortment of fruit trays, vegetable trays, humus and pita, cheese and crackers, etc.
  • Cook culturally diverse team meals within the Brewers Nutrition Program that are appealing to all members of the Team
  • Work in tandem with caterers to make sure that daily team meals are delivered, prepared and presented in an appetizing manner under ServSafe food safety standards
  • Execute proper quantities of all meals, bulk foods and beverages within daily budget
  • Prepare individual food items upon request to accommodate special Brewers Player/Staff nutritional needs
  • Perform inventory control of all food and beverages to ensure that inventory is maintained throughout spring training and the regular season
  • Purchase bulk food items from numerous merchants to maintain inventory daily or as needed
  • Post daily menus on video boards
  • Maintain a clean and sanitary environment within the clubhouse lounge including prep areas, hot and cold serving areas, dining tables, beverage coolers, dishes and utensils
  • Periodic maintenance of kitchen and dining room facility equipment ensuring that everything is cleaned and organized for efficient use and optimal performance
  • In collaboration with clubhouse team, facilitate large scale preparations and initiatives to ensure the optimal readiness of facilities for the arrival of Brewers Players and Staff at American Family Fields of Phoenix as well as Miller Park
  • Assist with special projects and other miscellaneous duties under the direction of Manager – Team Travel/Clubhouse Operations

Qualifications
Qualifications
   To perform this job successfully, an individual must be able to perform each essential duty satisfactorily.  The requirements listed below are representative of the knowledge, skill, and/or ability required.
  • ServSafe Certification
 
Education and/or Experience 
  • 3+ years of professional culinary experience in a restaurant or commissary kitchen
  • Experience working with purveyors and budgets
 
Computer Skills 
  • General understanding of Microsoft Word, Excel, Outlook, Google Slides
 
Other Skills and Abilities 
  • Must be self-motivated and service oriented
  • Ability to multi-task in a fast paced environment
 
Language Skills
  • Ability to clearly communicate with individuals or groups
  • Bi-Lingual Preferred (Spanish Speaking)
 
Mathematical Skills                                                     
  • Ability to calculate figures and measurements
  • Ability to apply concepts of basic algebra and geometry.

While performing the duties of this Job, the employee is regularly exposed to heat and steam from stove tops, ovens and warmers.  The employee must be able to safely handle knives and other sharp objects.
The noise level in the work environment is usually moderate.
 
Work Hours
  • Must be available to travel to Spring Training (February-March in Phoenix, AZ)
  • Must be available for all Regular Season/Post Season Home Games (March-October in Milwaukee, WI)
  • Must be available as needed in the Off Season and when the team is traveling for Road Games
