The Jacksonville Jumbo Shrimp (Triple A Affiliate of the Miami Marlins) is searching for a Director, Food & Beverage to oversee and manage the food and beverage operation for the entire stadium which includes 12 suites, seven picnic areas and an in-stadium lounge.  The ideal person will have excellent leadership ability, cutting edge ideas and superior customer service skills.  This hands-on Director role is tasked with working with the management team to create and deliver a unique ballpark experience for fans of all ages.

MAJOR RESPONSIBILITIES
• Establish, monitor, and enforce food quality, handling, and service standards to ensure a consistently high-quality dining and ballpark experience.
• Train and lead staff to deliver exceptional customer service and create memorable fan experiences through direct guest interaction and engagement.
• Recruit, hire, train, schedule, and manage full-time, part-time, seasonal, intern, and game-day staff, overseeing a workforce that may exceed 200 employees during peak season.
• Oversee all food and beverage operations for home games, premium areas, suites, clubs, catering, and non-baseball special events.
• Develop and execute menu offerings for concessions and premium hospitality areas that enhance guest satisfaction and drive revenue.
• Partner with Ticket Sales, Corporate Partnerships, and Events teams to successfully deliver premium experiences and contracted events.
• Develop and implement department-wide service standards, operating procedures, and training programs.
• Develop and manage annual budgets, forecasts, and game-day labor plans while controlling food, beverage, and labor costs.
• Analyze sales performance, pricing strategies, menu mix, and inventory controls to optimize profitability.
• Manage inventory, purchasing, equipment maintenance, vendor relationships, and contract compliance.
• Oversee POS systems across the stadium and prepare nightly, monthly, and seasonal revenue and performance reports.
• Lead, coach, and develop managers and supervisors while fostering a positive, inclusive, and accountable team culture.
• Ensure appropriate staffing levels for games, promotions, and special events.
• Ensure compliance with all local, state, and federal health, safety, and alcohol service regulations, including food safety and alcohol training certifications.
• Partner with Human Resources on training, documentation, performance management, and disciplinary matters.
• Collaborate with senior leadership on long-term food and beverage strategy, fan experience enhancements, and operational improvements.
• Support stadium upgrades, renovations, and capital projects related to food and beverage operations.
• Other duties as assigned.

MINIMUM REQUIREMENTS
• BA/BS Degree in Hospitality, Restaurant, Food Service Management, or related major is preferred.
• Skilled at restaurant operations, menu creation and food preparation methods that drive positive results and align with business goals.
• At least 3 years of experience leading multi-unit food and beverage operations (high volume venue/ concessions experience required), to include management of a large staff and focus on exceptional client and customer service is required; experience as a Chef is a plus.
• Skilled at developing and creating dining experiences that drive customer satisfaction and loyalty.
• Strong problem-solving skills, including the ability to analyze current business problems and implement recommended solutions.
• Excellent technical skills which include a food preparation and presentation, inventory, and cost control
• Proven experience managing budgets, labor models, and cost controls.
• Ability to work a flexible schedule, including nights, weekends and holidays.
• Excellent leadership, verbal, and written communication skills, with the ability to manage a seasonal workforce.
• Knowledge of food safety regulations, alcohol service laws, and best practices.
• Technologically savvy, familiar with POS and Microsoft Office programs
• Ability to stand and walk for extended periods of time.
• Ability to lift to 50 pounds,
• Ability to work in a fast-paced outdoor stadium environment in varying weather conditions.
