Sous Chef – Seasonal Full-Time

Position Overview:
The Sous Chef is responsible for the preparation, and execution of the overall menu set forth by the properties Executive Chef, for the entire catering operation at the baseball stadium. The catering operation consists of several luxury suites with a full-scale menu, as well as multiple outside picnic venues catering to groups from ten people to several thousand. This position will be expected to assist in directing an hourly kitchen crew of 10-12 people, and will require someone with prior cooking and management skills to be able to provide food for all catering venues within a short period of time. This position will also require someone with excellent time management and organizational skills. The Sous Chef reports directly to the property Executive Chef and will need to possess the ability to work with and assist the property Concessions manager, Catering Coordinator and Director(s) of Operations with any need or requirements in the absence of the Executive Chef.
Essential Duties and Responsibilities:
- In addition to the “back-of-the-house” food production responsibilities, this person must also display strong people skills to be able to fulfill the client service component of this position
- As a Sous Chef you play a vital role in a commercial/production kitchen
- Will work alongside the Executive Chef in communicating with clients on all special event catering needs and will make personal appearances at stadium catering events to further the service level
- Will assist the Executive Chef in producing and executing an hourly employee schedule, adhering to labor guidelines
- Assist with product ordering while maintaining proper inventory levels, and will work closely with your Executive Chef, Directors and occasionally sales department to understand the food service needs for each event
Minimum Qualifications:
- Prior experience in food service, restaurants, or catering required
- Strong working knowledge of all facets of the food and beverage industry, including but not limited to food safety, sanitation, inventory control, labor management, quality control, responsible beverage service
- Strong culinary skills and knowledge of commercial food service equipment
- Customer service oriented with the ability to interact with all levels of management and deliver an exceptional fan experience
- Excellent organizational, leadership, and problem-solving skills
- Strong communication and people management skills
- Excellent written and verbal communication; ability to collaborate and influence
- Ability to work all Gwinnett Stripers home games and non- baseball events
