The Kane County Cougars are part of the American Association of Professional Baseball and play their games in Geneva, Il at beautiful Northwestern Medicine Field. Over the course of a calendar year, the Cougars host 50+ home baseball games and a large number of special events in our suite level. Our suite level features a large commercial kitchen that services two rooftop party decks, thirteen party suites, five super suites and our Archives Conference Room.
Reporting to our Director of Food & Beverage, you will lead the food production team in executing the culinary operations throughout the suite level. In order to be successful, the right candidate will be able to create strong relationships with other members of managers and team members. This is a hands-on position as the culture is a team atmosphere. Candidates must be able to execute the F&B operation with the goal of providing a great culinary experience while providing excellent customer service. This is a seasonal full-time position running from mid-April to the end of September.
The Culinary Manager’s four main areas of focus are:
In-game service throughout the entire suite level.
Pre-game and post-game service to both baseball teams.
Pre-game and post-game service to the umpires.
Special Event service throughout the course of the calendar year.
ESSENTIAL FUNCTIONS OF POSITION INCLUDE, BUT ARE NOT LIMITED TO THE FOLLOWING:
Lead the production team in a positive, enthusiastic and cooperative workplace environment.
Work side-by-side with the team, reinforcing procedures and practices through repetition, leading by example and providing on-going constructive feedback.
Positively interacts with Catering & Events Manager and staff while rapidly solving any problems which may occur.
Lead in production of food preparation, ensuring recipe specifications, portion controls and kitchen timings are met. Monitors all food served relative to appearance, temperature, sanitary and quality standards.
Leads the charge in ensuring that all kitchen equipment and operations are in compliance with health department standards at all times.
Coordinates the delivery and set-up of catered services and food service areas as needed.
Ensures proper kitchen record-keeping and administrative requirements, including food inventories and invoicing of food products.
Other duties as assigned.
PREFERRED QUALIFICATIONS:
2+ years kitchen experience in an event venue or full / quick service restaurant. Management experience is a plus.
Culinary certification or degree a plus.
Expectation to work all 50 scheduled game dates. Consideration will be given to games that need to be missed.
Experience cooking in a high-volume operation that includes continuous batch cooking.
Experience with commercial cooking equipment including combi oven, steamer, flat top, char-broiler and deep fryer.
Comprehensive knowledge / focus on production, quality, cost, presentation and sanitation.
Prior experience in a collaborative team environment required.
Ability to work a flexible schedule; able and willing to work nights, weekends and long hours.
Currently have a Food Service Sanitation Manager Certification.
Ability to stand on feet for long periods and can lift 25 pounds.
Comfortable with using Google Suite applications.
Strong basic math skills.
Additional skills may be required to perform additional task(s) specific to work location.
