Food and Beverage: Food/Beverage Management

Responsible for the day to day operations for the back of the house and kitchen area of the restaurant including but not limited to purchasing of product, preparation, maintenance of quality standards, food standards, safety, sanitation and staff management.  You will be expected to provide the highest quality product for the ultimate sports fan.

 

Core Responsibilities

  • Manage staff including, training, and performance management
  • Ensure all food and products are consistently prepared and served according to the restaurants recipes, portioning, cooking and serving standards.
  • Responsible for ordering food products according to predetermined product specifications and received in correct unit count and condition and deliveries are received in accordance with the restaurant’s policies and procedures.
  • Control food cost and usage by following proper requisition of products from storage areas, product storage procedures, standard recipes and waste control procedures including checking and maintaining proper food holding and refrigeration temperatures control points.
  • Fill in where needed to ensure guest service standards and efficient operations.
  • Coordinate with Sales team for Catering and BEO events and requests both on site and off site.
  • Participate in Off-Site events.
  • Demonstrate impeccable product knowledge.
  • Share ideas for menu tweaks and new recipes for future menu rollouts.
  • Ensure that all equipment is kept clean and kept in excellent working condition through personal inspection and by following the restaurant’s preventative maintenance programs.
  • Provide orientation of company and department rules, policies and procedures and conduct training of new back of the house staff.
  • Schedule labor as required by anticipated business activity when ensuring that all positions are staffed when and as needed and labor cost objectives are met.
  • Other duties as assigned.

 

Minimum Qualifications for the Position:

  • Bachelors Degree Preferred
  • 2 -4 Years BOH Restaurant experience in High Volume Kitchen
  • 3+ Year Kitchen Management experience
  • Knowledge of BOH procedures for food & safety and sanitation
  • Experience in procuring and receiving product
