Summary
The prep cook is responsible for preparing cooking ingredients by washing and chopping vegetables, cutting meat etc. Undertake basic cooking duties such as reducing sauces, parboiling food etc. Prepare simple dishes such as salads, entrees etc. Maintain a clean and orderly kitchen by washing dishes, sanitizing surfaces, taking out trash and other duties as assigned.
 
Core Responsibilities
·         Assist in the receiving and ordering of all product
·         Making prep recipes and menu products to spec
·         Properly labeling, dating, covering and refrigerating prepped items for the line
·         Fill in where needed to ensure we meet hour high guest service standards and efficient operations
·         Control food cost and usage by following proper requisition of products from storage areas, product storage procedures, standard recipes and waste control procedures including checking and maintaining proper food holding and refrigeration temperature control points.
·         Ensure equipment is kept clean and in excellent working condition through personal inspection and by following the restaurant’s preventative maintenance programs
·         Performing opening, closing & side duties – setting up, stocking, and breaking down all kitchen equipment and prep, line, expo stations
·         Maintain an organized and sanitary kitchen environment ensuring restaurant meets all DOH and HAACP codes
·         Demonstrating impeccable product knowledge
·         Communicating professionally with co-workers and Front-of-the-House staff
·         Other duties as assigned
 
Minimum Qualifications for the Position:
·         Must be at least 18 years of age
·         1-2 Years Prep Experience
·         Knowledge of BOH procedures for food, safety and sanitation
·         Experience in procuring and receiving product preferred
·         A food safety certification program is required to be completed before being able to handle food
