Bakery 55 is located at the John Labatt House in downtown Buffalo's historic cobblestone district.  We are currently looking for a Production Baker to join our growing team.   Our production bakery will supply product for internal and external customers. In addition, we have storefront that includes a café serving unique baked goods and high quality coffee beverages.   
 
Summary:
The Baker is responsible for preparing all baked goods and pastries for the restaurant and other hospitality entities. You will work as a team to ensure the freshest bakery items are available for our customers. 
 
Core Responsibilities:
  • Utilize production guidelines to produce baked goods to recipe/spec
  • Prioritize tasks, rotate, pull and record shrink where applicable
  • Seek continuous improvement opportunities for production efficiency
  • Properly labeling, dating, covering and refrigerating bakery items
  • Control food cost and usage by following proper requisition of products from storage areas, product storage procedures and standard recipes and waste control procedures including checking and maintaining proper food holding and refrigeration temperate control points
  • Keep accurate log records
  • Ensure equipment is kept clean and in excellent working condition through personal inspection and by following the restaurants preventative maintenance programs
  • Perform opening, closing and side duties including setting up, stocking and breaking down all kitchen equipment
  • Maintain an organized and sanitary kitchen environment
  • Demonstrate impeccable product knowledge
  • Maintains confidentiality when appropriate
  • Other duties as assigned 
 
Minimum Qualifications for the Position:
  • Minimum of 1+ years baking/pastry experience in a high-volume production 
  • Preferred bench experience to shape and fold bread, croissants, danish etc… 
  • Must be available for flexible scheduling to include evenings, weekends and holidays 
  • Must be able to lift up to 50lbs
