The Culinary Supervisor provides hands-on leadership of our Food and Beverage offerings. This person will work closely with the Sous Chef and F&B Leadership to develop top tier food options for our guests and guide  culinary associates to create and present these recipes in our food outlet and special event operations. Assist with the supervision of the everyday operation of the department, ensuring all presentation specifications and quality standards are correctly followed. Accountable for maintaining kitchen inventory, cleanliness and ongoing training of the staff they supervise.
Required Skills Responsibilities
As a Food and Beverage Team Member duties may include:
  • Review Menus and BEOs in preparation for daily production. Consult with Sous Chef for details and changes. 
  • Ability to cook using standard dry, wet and combination cooking methods: able to us all food preparation equipment for cooking, preparing, slicing and mixing. 
  • Manage and ensure standards are being followed; delegate work to ensure optimum team efficiency. Observe production flow and make adjustments in order to adhere to control procedures for service. 
  • Check that all equipment is in safe and working order. Complete work orders for any equipment in need of repair or replacement
  • Ensure quality and consistency of food product in accordance with established standards while maintaining acceptable costs, minimal waste and superior quality 
  • Communicate all property information, safety and sanitation policies through daily dialogue with all team members. 
  • Communicate regularly with management all issues or concerns affecting the culinary operation. 
  • Work in conjunction with outlet manager on operational improvements
  • Customer engagement and/or Customer Relations Management (CRM) engagement, Food and Beverage locations (counter service and/or food preparation, cooking)
  • Assist customers in assigned areas to meet their needs and offer recommendations based on the programs and selections offered
  • Enforces park rules and regulations in assigned area of responsibility. Assists other staff in enforcing general rules and regulations, maintaining order, ensuring safety, and providing quality customer service to the stadium tenants, employees, and guests. 
  • Receive and quickly act upon requests or complaints from guests; refer serious concerns to supervisors. Accompany guests into the front office for a warm transition to receiving assistance. 
  • Maintain an extensive knowledge of the park, and provide quality directions to guests regarding seating, concessions, and essential areas within the park. 
  • Support the operations of the business including complex controls and all other functions in operating a customer service-based environment
  • Provide exceptional customer service to customers on-site throughout the duration of the tournament/event and offer support during other programing events at the park.
Education and Experience:
  • Minimum 2 years in Hotel, Club or Resort Culinary operation; Culinary degree or Apprentice certification; Management Training certification. 
  • Current Food-Safe certification or food handler sanitation certificate preferred
  • Strong knowledge of various cooking methods, ingredients, and procedures, current food trends and styles
  • Even-handed management style and skills; Helpful and friendly, willing to go the extra mile
  • A good communicator, always suggesting ideas and solutions
  • Desire to train and develop team members
  • Time-management skills
  • Critical thinking and ability to make effective decisions quickly when required
  • Organized with a great eye for detail
  • Ability to provide exceptional customer service skills; ability to adhere to Company’s Service Standards
  • Ability to operate personal computer, including ability to effectively use scanning equipment
  • Ability to handle multiple tasks simultaneously in fast-paced environment.

  • Willingness to work long hours and weekends seasonally as the business requires
  • Ability to stand for long periods of time, including walking long distances throughout the park during assigned shift. 
  • Must be able to work well in a fast-paced environment in large, crowded areas of outdoor park. 
  • Routinely exposed to extreme hot/cold weather conditions
  • While performing the duties of this job, the employee is regularly required to stand; use hands to finger, handle, or feel; and stoop, kneel, crouch, or crawl. 
  • The employee frequently is required to reach with hands and arms and talk or hear. 
  • The employee is occasionally required to walk, sit, climb or balance, and taste or smell. 
  • The employee must regularly lift and/or move up to 50 pounds. 
  • Specific vision abilities required by this job include close vision, distance vision, and ability to adjust focus. 
  • While performing the duties of this job, the employee is frequently exposed to moving mechanical parts. 
  • The employee is occasionally exposed to wet and/or humid conditions and fumes or airborne particles. The noise level in the work environment is usually moderate.
