Food and Beverage: Chef/Cook
The Washington Football Team is seeking an Executive Sous Chef to join our team. This individual will have a strong cooking background and sound foundation in classic cooking techniques. They will so have experience in scratch-cooking kitchens. 

Cooking Operations 
  • Oversee daily kitchen operations and ensure all stations are prepped and ready for each service.
  • Ensure all food items are prepared with the highest quality in mind and taste all necessary sauces, starches, vegetables, and proteins before service for quality assurance.
  • Follow all safety, sanitary, and food handling procedures and ensure the kitchen is held to the highest possible standards of food safety.
  • Ensure that all food preparation equipment is being used safety and correctly and that each are cleaned and maintained correctly.
  • Assist executive chef, sous chef(s), line cooks, prep cooks, and dishwashers in all aspects to ensure proper standards are upheld leading up to and during all meals.
  • Be familiar with every station for breakfast/lunch/dinner and fill in when needed.
Employee Managing
  • Direct supervisor to line cooks and dishwashers.
  • Ensure all line cooks and dishwashers receive and complete all necessary trainings, documents, and information from HR and other departments within the organization.
  •  Scheduling 
    • Create a weekly employee schedule for all positions within the kitchen that provides necessary coverage for all stations throughout the day. 
    • Communicate with all staff about PTO and ensure coverage for each day someone needs off. 
Complete necessary work in ADP for record keeping.
  • Listen and engage in employee feedback.
  • Write thoughtful yearly performance reviews and discuss with each line cook and dishwasher.
  • Coach, counsel, and encourage all employees and promote an environment suitable for growth from top to bottom.
Vendor Relations
  • Inventory kitchen items and place orders with necessary vendors to ensure kitchen is fully stocked the day.
  • Quality control on deliveries
    • Return faulty product and assure credit receipts.
  • Maintain relationship with sales representative and delivery drivers.
  • Contact and set up new vendors when applicable.
    • Communicate to accounts payable and ensure all new vendor forms are completed filed correctly.
Invoice & Food Budget Tracking
  • Data entry of delivery invoices for food and disposables
  • Forecast week to week and month to month food costs.
  • Communicate to executive chef and other sous chef(s) budget updates and help create weekly menus to stay in line with budget.
  • Communicate with accounts payable to ensure invoices are paid correctly and on time.
Menu Creating
  • Assist executive chef, sous chef(s), and cooks in creating weekly menus for breakfast, lunch & dinner main entrée, pasta, stir fry, salad, and pizza stations.
  • Bring new ideas and techniques to the table when creating menus.
  • Keep a nutritionally balanced mindset when creating menus.
  • Communicate and assure proper training to cooks when adding new item/technique onto menu.
  • Stay up to date on new trends in the industry and research new ideas and recipes to constantly evolve the menus.
  • Create and write recipes for new menu items.
Kitchen Equipment Repair Lead
  • Assess damage to kitchen equipment.
  • Communicate issue with maintenance.
    •  Decide if outside company is needed to fix or if we can fix internally.
  • Communicate need for PO from operations team if outside company is needed.
  • Contact repair company and schedule service appointment.
  • Read and respond to all necessary emails.
  • Stay up to date on all trainings, seminars, meetings, and proceedings. 
  • Liaise between the kitchen and multiple departments, including Football (all aspects), Operations, Human Resources, Media & Content, Marketing, Finance, etc. 
  • Show eagerness to grow individually and with the team.
  • Bring a positive attitude and a can-do spirit!

  • Strong cooking background and sound foundation in classic cooking techniques
    • Familiar with protein butchery, stocks, sauces, and protein, starch & vegetable cookery
  • Experience in scratch-cooking kitchens
  • Possess leadership, team building and implementation skills
  • Experience in Microsoft Office (specifically Outlook, Excel, & Word)
  • 2+ years of management experience
  • 7+ years of foodservice experience 
  • Fine dining experience preferred
  • Bachelors or culinary degree preferred
