Position Title: Food and Beverage Director 
Reports To: General Manager 
Company: Salem Red Sox 
Position Overview:
This position will be responsible for the entire Food & Beverage operation for the Salem Red Sox, the Class-A Affiliate of the Boston Red Sox. We are seeking a highly motivated individual that possesses strong oral and written communication skills and is comfortable working in a dynamic, fast-paced environment.  This individual will be responsible for maintaining a profitable Food & Beverage department while providing high-quality products and service.  
  • General oversight of entire Food & Beverage operation including concessions, catering and premium hospitality areas for all Salem Red Sox home games and non-game day events 
  • Select, hire and train all game-day concessions employees
  • Create training materials for each area of the operation and conduct training sessions
  • Responsible for maintaining all cooking equipment, freezers, refrigerators and beer dispensing equipment
  • Responsible for creating new menu items and plans for capital projects and stadium improvements
  • Responsible for the maintenance of and all updates to the POS software including technology troubleshooting, adding & deleting menu items, price changes, reporting, and service calls to the software company 
  • Responsible for training all game-day staff and Food & Beverage management team on the POS software 
  • Conduct cost analysis of each menu item prior to the season to set appropriate pricing
  • Manage food cost controls such as waste, spoilage, theft and portioning 
  • Manage labor costs
  • Ensure standards for sanitation and food preparation comply with VDH standards 
  • Ensure adherence to all ABC regulations
  • Maintain relationships with all vendors and effectively negotiate product pricing and contracts
  • Effectively negotiate contracts with all third-party vendors, and ensure that all third-party vendors have all proper licenses to do business at Salem Memorial Ballpark 
  • Schedule all concessions, catering and premium hospitality employees
  • Order all supplies for the operation including all food, beverage and alcohol
  • Conduct monthly inventory of all food & beverage products
  • Select, hire and train 2 seasonal interns
  • Responsible for P&L management for the food & beverage operation, including budgeting & forecasting
  • Responsible for managing budgeted expenses and hitting revenue goals
  • Effectively and efficiently communicate with accounting and finance department and submit financial reports in a timely manner
  • Responsible for application filing of all applicable licenses
  • Provide detailed game reports to GM and investors 
  • Bachelor’s Degree in Business or a related field 
  • 5+ years of experience in food service management
  • Experience within high-volume, multi-unit properties 
  • Experience overseeing department managers 
Supervisory Responsibilities:
This individual must be able to achieve results through providing direction and accountability to the other F&B team members including:
  • Food & Beverage Manager 
  • (2) Food & Beverage Assistants (Interns)
  • Kitchen Manager 
  • Game-Day Staff
