Summary  The Executive Chef/ Manager will have a passion for cooking, food design and nutrition. Responsibilities include developing appetizing menus, promoting local and regional food choices, featuring and incorporating specialty and unique items. Will work as a partner with the nutrition staff to create menus, educational opportunities, and provide a system through which our athletes are optimally fueled.  Displaying a strong enthusiasm for great food, this position designs, coordinates, supervises, and participates in the activities of the cooks and other kitchen personnel. Is cognizant of, manages and controls food costs. Performs in accordance with restaurant standards and policies.

Responsibilities

  • Provides leadership in culinary production, operations and procurement.
  • Insures that all Production/Utility Staff are trained in their work duties and follow Safety/Sanitation guidelines.
  • Represents the manager and senior leadership in day to day operation of functional areas.
  • Supports manager’s role in scheduling and training employees, and prioritizing work for others.
  • Interprets procedures, ensures daily operations are maintained.
  • Displays the ability to motivate staff and continually improve performance
  • Acts as a role model and a conduit between leadership and the work team.
  • Current in the latest culinary trends and seeks out opportunities to enhance culinary skills.
  • Works closely with Dietician and Strength and Conditioning staff to provide meals that meet the standards and guidelines of the Milwaukee Brewers nutrition program.

Qualifications

Qualifications To perform this job successfully, an individual must be able to perform each essential duty satisfactorily. The requirements listed below are representative of the knowledge, skill, and/or ability required.
 
Education and/or Experience
Associate’s Degree in Food Science, Nutrition, Culinary Arts or Hotel/Restaurant Management, preferred. Bachelor’s degree, preferred.
Minimum 3-5 years related experience as an Executive Chef or Executive Sous Chef in a hotel/catering environment with management responsibility.
 
Knowledge of quantity cooking procedures, special diets and safe food handling practices required. Must demonstrate proven ability to develop, plan and present creative menus as well as meeting deadlines and other timelines within the role. Experience interviewing, hiring and retaining staff, as well as ensuring labor law compliance preferred.
 
Computer Skills  
To perform the job successfully, an individual should have knowledge of Microsoft office software including Word, Excel, PowerPoint, Access, Outlook, and Internet Explorer.    
 
Language Skills                                             
Ability to read and comprehend simple instructions, short correspondence, and memos.  Ability to write simple correspondence.  Ability to effectively present information in one-on-one and small group situations to customers, clients, and other employees of the organization.
 
Mathematical Skills                                                     
Ability to add, subtract, multiply, and divide in all units of measure, using whole numbers, common fractions, and decimals.  Ability to compute rate, ratio, and percent and to draw and interpret bar graph
 
Reasoning Ability      
Ability to apply common sense understanding to carry out detailed but uninvolved written or oral instructions.  Ability to deal with problems involving a few concrete variables in standardized situations.

Work Hours                                                     
  • During Spring Training and during the baseball season, this position requires 40-60 hours per week and during extended spring and offseason 30-40 hours per week.
